The brunch,
We just came back from a road trip, in the city over the long weekend. I love going back to Newyork, each time I visit the city I see a lot of changes. This time I saw many street vendors and food trucks, and I mostly had my meals on the food trucks, including the fruit and vegetable juices.
But now I am back and I was craving for some good homemade, healthy food. So I looked in the pantry. I had few bags of potatoes that were growing old, so I decided to roast.

I decided to modify for my taste palette, so I took few Yams, Potatoes and Cauliflower.
I sliced them in the mandolin slicer , keeping them slightly thick, then I grated few pods of Garlic.
I added the olive oil and salt and some jalapeno pepper and added them to the veggie mix.
I mixed the olive oil, garlic, jalapeno, salt & pepper to sliced veggies and roasted them in my Convection oven. I baked them on 450F of about 20 minutes. Once the veggies were well done, I took them in the bowl and added some readymade taste makers, like Chings Singapore Curry spice mix(I got it in the Indian store).
Meal 1 - Side of veggies and Poached egg with mini pita breads on the side.
Meal 2- - Roasted veggies, slice cheese, lettuce, sriracha & toasted bread
Meal 3 - Roasted veggies, without the spices, just add butter and eat with Mini Pita Bread
The Smoothie
I blended, some strawberries and milk with Almond butter and finished it with the ice cubes for this summery smoothies.
I blended another batch of strawberries with the carnation breakfast blends
